Matcha Avocado Cheesecake

Ingredients

Crust:

½ cup graham cracker crumbs

1 Tbsp butter – melted

 

Filling:

2 eggs – beaten

½ tsp vanilla

1 ripe avocado – mashed

16 oz cream cheese – softened

1 (14-oz) can condensed milk

¼ cup sugar

1 Tbsp matcha powder (plus extra for garnish)

1 tsp lemon zest

Directions

  1. Heat oven to 325°F.
  2. Mix together graham cracker crumbs and butter. Press to the bottom of an oven-safe pan or skillet.
  3. Beat together filling ingredients and pour into pan.
  4. Bake for about 50 minutes or until the center is set.
  5. Finish by dusting more matcha powder on top.
