Nashville Pulled Chicken Sandwiches

Ingredients

2 lbs boneless, skinless chicken breast

1 cup vegetable oil

1 cup ketchup

¼ cup honey

3 Tbsp cayenne pepper

1 Tbsp chili powder

1 Tbsp paprika

2 tsp garlic powder

1 tsp onion powder

¼ head green cabbage – shredded

½ carrot – peeled and shredded

¼ cup mayonnaise

1 Tbsp white sugar

¾ Tbsp lemon juice

1 Tbsp white vinegar

Salt and pepper to taste

6 hamburger buns

Bread and butter pickles

Directions

  1. Make the Nashville hot chicken sauce by whisking together the oil, honey, cayenne, ketchup, chili powder, paprika, garlic powder, onion powder, 1 teaspoon salt and 2 teaspoons pepper. Set aside.
  2. Place chicken into a pot and pour sauce over chicken. Bring to a boil then reduce heat and simmer for about 1 ½ hours. Check occasionally as cook time may differ depending on chicken breast size. Allow chicken to cool slightly before shredding with two forks and tossing in sauce.
  3. In a bowl, make the coleslaw by combining the cabbage, carrots, mayonnaise, white sugar, lemon juice, vinegar and salt and pepper to taste.
  4. Toast buns and assemble sandwiches with chicken, coleslaw and pickles.
