Red Velvet Churros

Ingredients

Red Velvet Churros:

2 cups water

¼ cup unsalted butter

½ tsp salt

2 cups all-purpose flour

2 Tbsp cocoa powder

6 eggs – beaten

Drops of red food coloring

½ cup sugar

1 tsp cinnamon

Canola oil for frying

 

Cream Cheese Dipping Sauce:

8 oz cream cheese – softened

7 oz sweetened condensed milk

Directions

  1. In a saucepan, combine water, butter and drops of red food coloring. Bring to a boil.
  2. Slowly stir in flour, cocoa powder and salt. Continue mixing until the dough forms (about 1 minute).
  3. Transfer dough to a mixing bowl. Use an electric mixer to beat in eggs, one at a time. Beat until dough is smooth. Transfer dough to a piping bag.
  4. Heat a stock pot with about 4 inches of oil over medium-high heat to 350F°.
  5. Pipe in 3-inch strips of dough into oil and cook for about 2 to 4 minutes. Remove churros and place on a paper towel-lined plate.
  6. While the churros are still warm, combine cinnamon and sugar on a plate and roll churros in the cinnamon sugar.
  7. Whisk together cream cheese and condensed milk and serve churros with the cream cheese dipping sauce.
