4 slices whole-grain or sourdough bread
4 vines of cherry tomatoes
2 cloves garlic – minced
2 Tbsp olive oil
2 medium avocados
1 tsp lime zest
2 tsp lime juice
Salt and pepper to taste
¼ tsp chili flakes
½ cup fire-roasted corn
2 Tbsp feta cheese
For garnish: cilantro
Preheat oven to 375°F.
In a small bowl, combine garlic and olive oil. Place tomatoes on the vine in a baking dish, drizzle on olive oil and garlic and top with salt and pepper. Roast for 20 minutes or until soft and blistered.
As the tomatoes roast, make mashed avocado by combining avocado, lime zest, lime juice, chili flakes, and salt and pepper to taste. Use a fork to mash ingredients together.
Toast bread and top with mashed avocado, tomatoes on the vine, corn, feta cheese and cilantro.
