Sun-Dried Tomato & Tortellini Soup

Ingredients

9 oz fresh cheese tortellini

1 Tbsp olive oil

1 clove garlic – minced

¼ cup ready-to-eat sun-dried tomatoes – chopped

½ Tbsp tomato paste

½ cup onion – diced

2 cups chicken stock

½ cup crushed tomatoes

1 clove garlic – minced

¼ cup onion – diced

1 cup heavy cream

½ Tbsp Italian seasoning

1 cup spinach

1 tsp oil for cooking

Salt and pepper to taste

For serving: Grated parmesan cheese, sliced fresh basil

Directions

  1. In a large pot, heat oil with half of sun-dried tomatoes, garlic, onion, Italian seasoning, and tomato paste. Saute for a few minutes. Add chicken stock, salt and pepper. Simmer for about 15 minutes.
  2. Use an immersion blender or blender to puree soup and return to pot.
  3. Cook tortellini according to package instructions. Strain and add tortellini and cream to the pot with the soup base. Reheat soup to a simmer and stir in spinach.
  4. Serve soup with basil and parmesan.
