10 oz fresh albacore tuna
1 large avocado
½ cup celery – chopped
½ cup red onion – chopped
1 jalapeno – minced
1 clove garlic – minced
3 Tbsp cilantro – chopped
1 Tbsp lemon juice
½ tsp dijon mustard
¼ tsp cumin
Olive oil for cooking
Salt and pepper to taste
8 slices of bread
In a medium pan, heat olive oil over medium-low heat. Season tuna with salt and pepper and add to the pan. Turn heat to low and cook for aboth 7 minutes per side or until cooked through. Set aside to cool.
In a bowl, mash avocado. Add celery, red onion, jalapeno, garlic, and cilantro and mix well.
Mix in lemon juice, dijon mustard, cumin and salt and pepper.
Use a fork to break tuna into pieces then carefully fold into avocado mix.
Serve between slices of bread.
